For the rempah:

Method:

Fry the rempah in 3 tbsp oil until fragrant.

Add
the slices of chicken liver and seal on all sides.
Add about 2 cups water and enough soy sauce to
taste.

Cover the pan and simmer for about 7 minutes;
livers should be firm, pink inside but not visibly
'bleeding'. They should never be allowed to overcook
as they become very tough and unpalatable.
-
Garnish with chili and coriander leaves and serve
immediately with plain.
