Asian Recipes - Braised Spiced Liver Recipe

Ingredients

  • 450g chicken livers

For the rempah:

  • 1 large onion

  • 3 cloves garlic

  • 2cm fresh green ginger

  • 2 chilies

  • 1 1/4 tsp ground coriander

  • 1 tsp ground cumin

  • 2 tsp turmeric

For garnishing:

  • slices of chili & coriander leaves

Serves 8


Method:

  1. Fry the rempah in 3 tbsp oil until fragrant.

  2. Add the slices of chicken liver and seal on all sides. Add about 2 cups water and enough soy sauce to taste.

  3. Cover the pan and simmer for about 7 minutes; livers should be firm, pink inside but not visibly 'bleeding'. They should never be allowed to overcook as they become very tough and unpalatable.

  4. Garnish with chili and coriander leaves and serve immediately with plain.
