Asian Recipes - Cauliflower with Prawns Recipe

Ingredients

  • 1 good cauliflower, approx 500-600g

  • salt

  • 75g melted butter

  • 1 spice measure (1 ml) ground nutmeg

  • 2 hard-boiled eggs, coarsely chopped

  • 1 tbsp finely cut chives

  • 1 tbsp finely chopped parsley

  • 400-500g prawns

Serves 4


Method:

  1. Boil the cleaned and trimmed cauliflower in lightly salted water for 10 minutes, covered, or until barely tender.

  2. Allow to drain then place on a serving dish and arrange the prawns around it.

  3. Melt the butter and allow it to brown, then mix with the egg, parsley and chives.

  4. Flavor with nutmeg and pour the mixture over the cauliflower.

  5. Serve at once with toast or crisp breads for a light lunch or supper dish.
