Ingredients

1 good
cauliflower, approx 500-600g
-
salt
-
75g melted butter
-
1 spice measure (1 ml)
ground nutmeg
-
2 hard-boiled eggs, coarsely
chopped
-
1 tbsp finely cut chives
-
1 tbsp finely
chopped parsley
-
400-500g prawns
Serves 4
Method:
-
Boil the cleaned and
trimmed cauliflower in lightly salted water for 10
minutes, covered, or until barely tender.
-
Allow
to drain then place on a serving dish and arrange
the prawns around it.
-
Melt the butter and allow it to
brown, then mix with the egg, parsley and
chives.
-
Flavor with nutmeg and pour the mixture
over the cauliflower.
-
Serve at once with toast or crisp
breads for a light lunch or supper dish.
