Asian Recipes - Chinese Mushrooms with Savory Filling Recipe

Ingredients

  • 30 large Chinese mushrooms

  • 100 gm lean local pork

  • 30 gm cooked ham

  • 1 egg

  • 1 small onion, chopped finely

  • 2 tbsp dried shrimps, coarsely ground

  • 1 tbsp corn flour

  • 1 tbsp each soy sauce, light and rice wine

  • salt to taste

For the sauce:

  • Chicken stock

  • MSG

  • Corn flour

  • Sesame seed oil

Serves 4


Method:

  1. Soak the mushrooms in warm water for 30 minutes. Remove stalks and match mushrooms into pairs of equal size.

  2. Mince the pork and ham together and mix with shrimps, onion, corn flour rice wine and half the soy sauce.

  3. Divide the mixture between half of the mushroom caps and cover each one, sandwich style with the remaining mushroom of each pair. Press well together.

  4. Steam for 20 ­30 minutes; just before serving, make up the sauce with stock, the remainder of the soy sauce and other sauce ingredients.

  5. Pour sauce over the mushroom caps and serve very hot.

  6. For those wishing to follow a vegetarian diet prior to the New Year festivities, this dish can be made with mashed spiced bean curd instead of the meats.
