Serves 4
Method:

Shell and devein
prawns, leaving tails on. With point of a sharp
knife make a small slit through underside of prawn.

Wash broccoli, divide into florets, taking care
to keep a length of tender green stalk on each
piece. If florets are large, slice with a sharp
knife, cutting through stem as well.

Pass the end
of the stem through the slit in the underside of the
prawn so that the floret rests within the curve of
the prawn.

Heat the oil in a wok and add finely
chopped onion, garlic and ginger. Stir fry for one
minute.

Add the prawns threaded with broccoli.
Turn the prawns in the wok for about two minutes,
taking care not to dislodge the broccoli.

Add the soy sauce, water and rice wine, bring to
simmering point, cover and cook for further two
minutes.

Thicken the sauce with corn flour mixed
with water and serve immediately.
