Ingredients
For the batter:
For the sauce:

Method:

Sift the flours and
salt together into
a large bowl. Add the milk and water mixture and
beat till batter is smooth.
Add in the egg yolk and the peanut oil. Beat again
until thoroughly mixed.

Stir in the ginger and leave
the mixture to rest for half an hour.
Beat the egg white until stiff and add to the batter
just before use.

Slice the fish into thin pieces and dry on kitchen
paper.

Dip each piece into the batter
and fry in hot oil until golden, taking care not
to overcook the fish. Two to three minutes
should be enough, cooking three or four pieces
at a time.

Process
the sauce ingredients together in a blender or mix
thoroughly by hand, breaking down the sweet corn
kernels. Place the sauce in a small pan and bring to
simmering point.

When all the fish is cooked,
pour the sauce over the fish pieces and garnish, if
desired, with spring onion flowers.
