Asian Recipes - Fish in Salted Chili Recipe

Ingredients

  • 20 fresh chilies, coarsely pounded

  • 1 tsp each salt and sugar

  • 4 small fresh fish (ikan selar)

Serves 4


Method:

  1. Clean the fish and make two long slits either side of the back bone about 1 cm deep.

  2. Pound the chilies with the salt and the sugar and use this mixture to stuff into the slits in the fish.

  3. In deep oil, enough to cover the fish, fry for about ten minutes, two at a time until crisp.

  4. It is important to fry for a long enough time to make the chili permeate the flesh of the fish.

  5. In order to do this the oil must not be too hot at the start.
