Asian Recipes - Glutinous Black Rice Pudding (Pulut Hitam) Recipe

Ingredients

  • 250g glutinous black rice

  • 100g sugar

  • 1 piece gula melaka

  • 1 tsp salt

  • 1 stick cinnamon

  • 2 cups rust coconut milk

Serves 4


Method:

  1. Soak the black rice overnight in plenty of water. Discard the soaking water and wash rice thoroughly to remove husks.

  2. Fill a large saucepan half full of water and add in the sugars, the salt and the cinnamon stick. Bring to the boil and carefully add the rice.

  3. Cook the rice for at least two hours, taking care to add more water if the mixture goes dry ­black rice needs a great deal of water when cooking. Alternatively, cook the rice  overnight in a "crock-pot" slow cooker.

  4. When the rice grains are tender but not soggy the pudding is ready for serving, but it can be stored in the refrigerator and re-heated at a later date when convenient.

  5. It should be served with coconut milk and extra brown sugar may be added if you prefer a sweeter dessert.
