Asian Recipes - Indonesian Pumpkin in Coconut Milk Recipe

Ingredients

  • 700g pumpkin

  • 1 1/2 cups water

  • 1 large piece gula melaka

  • 10cm pandan leaf

  • 1 cinnamon stick

  • 1/4 tsp salt

  • 1 cup first pressing coconut cream

Serves 4


Method:

  1. Peel pumpkin and cut into uniform pieces about 5cm square.

  2. Boil together the water, the flavorings and the gula melaka.

  3. Add the pumpkin and cook until tender (about 40 minutes).

  4. Check by piercing the flesh with a skewer or sharp knife.

  5. Add the coconut cream and bring back to simmering point to allow the sauce to thicken.

  6. Do not cover with a lid. Serve hot or warm with glutinous rice or by itself.
