Asian Recipes - Indonesian Sambal Shrimp (Udang) Recipe

Ingredients

  • 800 g medium-large prawns

  • 1 tbsp brown sugar

  • 50 g red chili

  • 250 g shallots

  • 2 stalks lemon grass

  • 10 g candle nuts

  • 10 g shrimp paste

  • 2 tbsp tamarind

  • 30 g oil

  • 8 tomatoes quartered

Serves 4


Method:

  1. Shell and de-vein prawns and season with sugar and salt.

  2. Blend red chills, shallots, lemon grass, candle nut and shrimps paste to smooth paste.

  3. Prepare 1 cup tamarind juice from the tamarind and strain it.

  4. Fry blended ingredients in oil.

  5. Add prawns and fry for 5 minutes and add tomatoes and tamarind juice.

  6. Cook for about 5 to 8 minutes till prawns are cooked and the sauce thickened.

  7. Add salt and pepper to taste and serve.
