Asian Recipes - Indonesian Spinach and Sweet Corn
Recipe
Ingredients
Serves 4
Method:
-
Ground together
the onions, garlic and blachan.
-
Fry the ground
mixture in a small amount of oil until fragrant. Add
in the stock and bring to the boil.

Meanwhile,
sort through the spinach and separate the stalks
from the leaves. Wash well and cut the stalks into
4cm lengths.

Put the stalks into the stock and boil
for 3 minutes. Add in the spinach leaves and cover
the pan for one minute.

Drain off the sweet corn,
discarding the brine. Stir the kernels into the pan
and heat through for another 2 minutes.

By this
time the stalks should be tender, the spinach leaves
limp and the sweet corn well mixed and hot. Serve
immediately.
