Asian Recipes - Malaysian Grilled Prawn (Udang Panggang) Recipe

Ingredients

  • 16 medium prawns in shell

  • 1 tsp com oil

For the rempah/marinade:

  • 6 small onions

  • 4 cloves garlic

  • 2 cm piece fresh tumeric

  • 1/2 tsp each coriander and cumin seeds

  • 1/2 tsp each ground coriander and cumin lemon juice

Serves 4


Method:

  1. Wash the prawns. Remove all the shell except at the tail and clean away the main vein.

  2. Make up the rempah with as much of the lemon juice to make it moist but not liquid. Add pinch salt and sugar.

  3. Marinate the prawns in the rempah for at least half an hour; shortly before cooking add in the oil and mix well.

  4. Spear two or three prawns together on a satay stick and grill lightly over a charcoal fire or under the grill, turning once or twice and reapplying the remaining marinade.

  5. Do not overcook and be sure to serve straight away, garnishing with lemon and/or cucumber wedges.
