Malaysian Kangkong in Sweet Gravy Recipe
Ingredients

450 g kangkong or
other green vegetable
-
4 tbsp dehydrated
shrimps/prawns
-
2 tbsp gula melaka
-
2 cups second coconut
milk
For the rempah:
-
1 large onion
-
2 cloves garlic
-
1 cm fresh ginger
-
1 fresh chili
-
1 tsp turmeric
powder
Serves 4
Method:
-
Wash the greens
very well in several changes of water, rip the leaves from the stalks and cut the stalks into 4 cm
lengths.
-
Soak half the dried prawns in a little
water.
-
Make up the rempah, grinding finely. Add
to it the remainder of the dried prawns and a little
sugar.

Fry the rempah in a little oil until
fragrant, then add in the kangkong stalks.
-
Stir
fry for a few minutes then add in the coconut milk,
the prawns and their liquid, the gula melaka
(chopped), and
the remainder of the kangkong or
other vegetables.
-
Simmer for 3-5 minutes - according to the cooking
time of your chosen vegetable.

Serve immediately
with rice and meat.
