Asian Recipes - Malaysian Tomato Beef Recipe

Ingredients

  • 450 g beef

  • 1 stock cube

  • 2 tbsp evaporated milk

  • 2 tbsp tomato paste

  • salt & sugar to taste

  • 2 carrots cut into cubes

  • 3 small potatoes cut into thirds

  • 2 tbsp oil

For the rempah:

  • 5 small onions

  • 2 cm piece of fresh ginger

  • 3 cloves of garlic

  • 3-5 dried chilies

Serves 4


Method:

  1. Make stock with the stock cube and simmer the beef cubes in the stock for about one hour or until the beef is tender.

  2. Make up the rempah and fry it in a wok until fragrant, using 2 tbsp oil.

  3. Add in the beef, beef stock, tomato paste and potatoes. Cover the pan with a close-fitting lid and simmer for 15 minutes.

  4. Add in the carrots and cook for a further ten minutes.

  5. Check the seasoning and that all the vegetables are cooked; add salt and sugar if required and then pour in the milk.

  6. Simmer the sauce for a few seconds more until it is thick and creamy.

  7. Serve with plain rice.
