Ingredients
For the rempah:
-
4 pieces
garlic
-
2 slices of
fresh ginger
-
5 small red
onions
-
5 chilies
Serves 4
Method:
-
Pounded together the Rempah
ingredients.
-
Fry the rempah in about 4 tbsp oil, until
fragrant.
-
Add a
drop of water to prevent sticking and burning.
-
Add the
mussels or cockles and fry over a high flame for about
2-3 minutes, or until the shells burst open.
-
Garnish
with coriander leaves and chopped spring onion tops.
