Asian Recipes - Singaporean Sliced Roast Duck with Broccoli Recipe

Ingredients

  • Half a cold roast duck cut into bite-size pieces

  • 300g fresh broccoli, broken into florets and blanched

  • 4 spring onions, trimmed and sliced

  • 4 tbsp frying oil or softened lard

  • 2 cm fresh ginger, shredded

  • 1/2 tsp white vinegar

  • 1/2 tsp sesame oil

For the seasoning:

  • 1/2 tsp salt

  • 1 tbsp light soy sauce

  • 2 tsp rice wine

  • 4 tbsp chicken stock

  • 3/4 tsp corn flour

Serves 4


Method:

  1. Take out as many of the duck bones as possible. Heat oil in a wok and add the duck meat.

  2. Stir fry for one minute. Add the blanched broccoli, the ginger and the seasoning ingredients until every piece is coated.

  3. Add stock and vinegar and thicken with corn flour in a small amount of cold water.

  4. When thickened and clear, add sesame oil and serve immediately.
