Singaporean Sliced Roast Duck with Broccoli Recipe
Ingredients
-
Half a cold roast
duck cut into bite-size pieces
-
300g fresh broccoli,
broken into florets and blanched
-
4 spring onions,
trimmed and sliced
-
4 tbsp frying oil or
softened lard
-
2 cm fresh ginger,
shredded
-
1/2 tsp white vinegar
-
1/2 tsp sesame oil
For the seasoning:
-
1/2 tsp salt
-
1 tbsp light soy
sauce
-
2 tsp rice wine
-
4 tbsp chicken stock
-
3/4
tsp corn flour
Serves 4
Method:
-
Take out as many of the duck
bones as possible. Heat oil in a wok and add the
duck meat.
-
Stir fry for
one minute. Add the blanched broccoli, the ginger
and the seasoning ingredients until every piece is
coated.
-
Add stock and vinegar and thicken with corn flour in a small amount of cold water.
-
When
thickened and clear, add sesame oil and serve
immediately.
