Asian Recipes - Singaporean Three Green Noodles Recipe

Ingredients

  • 600g fresh noodles

  • 600g Ksi Choy, Kangkong and Chinese cabbage, mixed

  • 2 tbsp light soy sauce

  • 6 tbsp oyster sauce

  • Salt and pepper to taste

  • 2 tbsp Chinese rice wine

  • 300g roast pork pieces

  • 2 pig's kidneys, sliced

  • 4 pieces chicken livers, sliced

  • 2 tbsp sesame oil

  • 2 tsp corn flour

  • 1/2 metric cup water

  • 4 slices young ginger root

  • 4 cloves crushed garlic

  • 2 tbsp com oil

  • 2 tbsp frozen peas

  • 1 red chili-sliced

Serves 4


Method:

  1. Cut the green vegetables into 2 cm lengths, discarding coarse stems.

  2. Heat the corn oil in a wok. Fry the garlic and ginger.

  3. Stir in liver and kidney. Mix the corn flour with water.

  4. Stir in quickly all the other ingredients and the corn flour mixture. Do not overcook the vegetables.

  5. Toss in the noodles and stir fry rapidly until noodles are not and the sauce is distributed well. Serve immediately.
