Asian Recipes - Squid Fried Assam Java-Style Recipe

Ingredients

  • 15-20 small onions (shallots), chopped or sliced

  • 2 stalks of lemon grass

  • 6 red or green chilies

  • a 20cm cube of assam, soaked and squeezed for juice

  • 600 gm squid, cleaned but left with ink

  • 2 tsp sugar

  • 1 tsp salt

Serves 4


Method:

  1. Marinate the squid in the assam juice and sugar for at least 20 minutes.

  2. Heat about 6 tbsp cooking oil in a wok and add in the onion and bruised lemon grass. Fry till fragrant.

  3. Add the squid and assam and simmer gently until the gravy begins to thicken: this takes about 15-20 minutes on low flame.

  4. With a slotted spoon, remove the so tong from the wok and boil the remaining juices fast, until the sauce takes on a very thick consistency.

  5. Return the squid to the pan, together with the whole chilies.

  6. Heat through and serve very hot.
