Asian Recipes - Sri Lanka Lamb Curry Recipe

Ingredients

  • 10 red onions chopped

  • 2 thin slices of ginger

  • 1/4 tsp sweet cumin powder

  • 1 tsp each coriander and cumin powder

  • 2 tbsp chili powder

  • 1 cup each first and second pressing of coconut milk

  • 300 g each of mutton, pork and beef

  • 4 cloves garlic

  • 1 tsp fenugreek

  • 4 tbsp dried roasted prawn powder (ground dried prawns)

  • 1/4 tsp turmeric

  • 2 tbsp oil

Serves 4


Method:

  1. Cover the meat with sufficient water. Add salt, cardamoms, cinnamon, cloves and simmer for one hour.

  2. Remove meat. Reserve stock for another recipe.

  3. Cut the meats into very small pieces. Mix with all the spice ingredients and set aside.

  4. Heat oil and fry the onions and curry leaves. After a few minutes add the meat and cook for about 5 minutes, stirring continuously.

  5. Add the second-pressing coconut milk. Cook for further 5 minutes.

  6. Add the thick coconut milk and allow curry to cook only until the gravy is thick. Add salt if required.
