Asian Recipes - Sri Lanka Mullicatawny with Meat

Ingredients

450 g meat with bones
-
1 cup first extract
of coconut milk

1/2 tsp fenugreek
-
1 large onion
-
20 peppercorns
-
1 carrot
-
2 red onions sliced
(for tempering)

1/4 tsp sweet cummin
-
1/4 tsp cummin
-
a pinch of turmeric
-
4 cloves garlic, cut
-
3 tomatoes cut into
pieces
-
salt to taste
-
1 tbsp fat
-
1/2 tbsp coriander
powder
-
6 cups water
Serves 4
Method:

Add all the
ingredients together, except the coconut milk, fat
and red onions.

Bring to boil and simmer down to 3-4
cups stock.

Remove and cut the pieces of meat and
strain the stock.

Heat fat and temper the red
onions until crisp. Add the pieces of meat. Cook 5
minutes.

Add the stock and the coconut milk. Add
a dash of lime juice before serving, and salt if
required.
Note: If the coriander taste is not enough, add a little
of the coriander powder along with the tempered
onions.
