Asian Recipes - Sri Lanka Mullicatawny with Meat Recipe

Ingredients

  • 450 g meat with bones

  • 1 cup first extract of coconut milk

  • 1/2 tsp fenugreek

  • 1 large onion

  • 20 peppercorns

  • 1 carrot

  • 2 red onions sliced (for tempering)

  • 1/4 tsp sweet cummin

  • 1/4 tsp cummin

  • a pinch of turmeric

  • 4 cloves garlic, cut

  • 3 tomatoes cut into pieces

  • salt to taste

  • 1 tbsp fat

  • 1/2 tbsp coriander powder

  • 6 cups water

Serves 4


Method:

  1. Add all the ingredients together, except the coconut milk, fat and red onions.

  2. Bring to boil and simmer down to 3-4 cups stock.

  3. Remove and cut the pieces of meat and strain the stock.

  4. Heat fat and temper the red onions until crisp. Add the pieces of meat. Cook 5 minutes. 

  5. Add the stock and the coconut milk. Add a dash of lime juice before serving, and salt if required.

Note: If the coriander taste is not enough, add a little of the coriander powder along with the tempered onions.
