Asian Recipes - Sri Lanka Potato Curry Recipe

Ingredients

  • 6 potatoes

  • 1 onion

  • 2 green chilies

  • 1 tsp chili powder

  • 1 tsp salt

  • 1 cup each first and second extracts of coconut milk

  • 3 tbsp oil

  • a spring of curry leaves

  • 2 tsp coriander powder

  • 1 cm stick cinnamon

Serves 4


Method:

  1. Chop the onions and green chilies. Peel and cut potatoes into convenient sizes.

  2. Heat oil till very hot add the onions, curry leaves and cinnamon.

  3. When the onions are light brown, add the potatoes and salt and fry lightly for 5-7 minutes.

  4. Add the curry powders and keep tossing for a minute or two.

  5. Add the second pressing of coconut milk and cook till potatoes are soft.

  6. Add first pressing coconut milk to thicken the gravy.
