Ingredients

800 g sea bass
-
1/4 liter fish
stock
-
30 g sliced ginger
-
30 g Chinese
celery
-
80 g black soy
sauce
-
1 tbsp salt
-
1 tbsp pepper
Serves 4
Method:
-
In a covered pan, simmer the sea bass in the fish
stock until the flesh flakes easily when tested with
a fork.
-
Remove the fish to a fireproof dish; pour
all the ingredients and fish stock over the fish.
-
Poach the fish for 4 minutes and serve at once.
