Recipe
Ingredients

600 gm ground wet
rice flour
-
300 gm cubed yam
-
Salt and pepper to
taste
-
2 cloves crushed
garlic
-
1 metric cup
chopped chicken meat
-
4 tbsp chopped
dried shrimps
-
4 tbsp roasted peanuts, coarsely ground
-
1 piece chicken
stock cube
-
6 sliced and golden fried shallots
-
3 tbsp vegetable
oil
-
Chinese parsley
-
Water
Serves 4
Method:
-
Mix the rice flour with yam adding enough water to
combine the two to a thick consistency.
-
Pour in
(slightly greased) round aluminium tray. Steam over
high heat till firm.
-
Heat oil, fry the garlic, then
stir in the rest of the ingredients.
-
When cooked,
remove and stir in peanuts. Pour cooked ingredients
over top of cooked cake, sprinkle with pepper and
garnish.
-
Serve with a good chili sauce and prepared
mustard.
