225g/8oz beef fillet (tenderloin)
or rump (round) steak, cut across the grain into 12
strips

thin strips of streaky
(fatty) bacon

ground black pepper

chili sambal, for
dipping
For the marinade:

Method:

To make the marinade, mix all the
ingredients in a large bowl until the sugar dissolves.
Season generously with black pepper. Add the beef
strips, stir to coat them in the marinade, and set aside
for about an hour.

Preheat a griddle pan over a high
heat Roll up each strip of beef and wrap it in a slice
of bacon. Thread the rolls on to the skewers, so that
you have three on each one.

Cook the bacon-wrapped
rolls on the hot griddle for 4-5 minutes, turning once,
until the bacon is golden and crispy.

Serve immediately,
with a bowl of chili sambal for dipping.
Note: In northern Vietnam, beef often
features on the street menu. Grilled, stir fried, or
sitting majestically in a steaming bowl of pho, beef is
used with pride. In Cambodia and southern Vietnam,
snacks like this one would normally be made with pork or
chicken.
Cook's Tip:
These tasty skewers can also be cooked under a preheated
grill (broiler). or over hot coals on the barbecue.
Simply cook for 6-8 minutes, turning every couple of
minutes so that the bacon is browned by not burned.
Serve them as an appetizer ahead of the main course -
they are light enough to whet the appetite without
spoiling anticipation of the rest of the meal.
