  • 12 thin strips of streaky (fatty) bacon

  • ground black pepper

  • chili sambal, for dipping

For the marinade:

  • 15ml/1 tbsp groundnut (peanut) oil

  • 30ml/2 tbsp fish sauce

  • 30ml/2 tbsp soy sauce

  • 4-6 garlic cloves, crushed

  • 10ml/2 tsp sugar

Serves 4

Method:

  2. Preheat a griddle pan over a high heat Roll up each strip of beef and wrap it in a slice of bacon. Thread the rolls on to the skewers, so that you have three on each one.

  3. Cook the bacon-wrapped rolls on the hot griddle for 4-5 minutes, turning once, until the bacon is golden and crispy.

  4. Serve immediately, with a bowl of chili sambal for dipping.

Note: In northern Vietnam, beef often features on the street menu. Grilled, stir fried, or sitting majestically in a steaming bowl of pho, beef is used with pride. In Cambodia and southern Vietnam, snacks like this one would normally be made with pork or chicken.

Cook's Tip: These tasty skewers can also be cooked under a preheated grill (broiler). or over hot coals on the barbecue. Simply cook for 6-8 minutes, turning every couple of minutes so that the bacon is browned by not burned. Serve them as an appetizer ahead of the main course - they are light enough to whet the appetite without spoiling anticipation of the rest of the meal.
