Light Bites Recipes - Chicken Teriyaki Recipe

Ingredients

  • 450g/1lb boneless chicken breast portions, skinned

  • orange segments and mustard and cress (fine curled cress), to garnish

For the marinade:

  • 5ml/1 tsp sugar

  • 15ml/1 tbsp sake

  • 15 ml/1 tbsp dry sherry

  • 30ml/2 tbsp dark soy sauce

  • grated rind of 1 orange

Serves 4


Method:

  1. Place the chicken on a board and slice into long. thin strips using a cleaver or sharp knife.

  2. Mix together the sugar; sake, dry sherry. soy sauce and grated orange rind in a bowl.

  3. Place the chicken in a separate bowl, pour over the marinade and set aside to marinate for 15 minutes.

  4. Add the chicken and the marinade to a preheated wok and stir-fry for 4-5 minutes, until the chicken is fully cooked.

  5. Serve garnished with orange segments and mustard and cress.

Cook's Tip: Chicken Teriyaki makes a good sandwich filling. Let it cool in the marinade so that it remains moist and succulent Watercress goes well with the chicken, as would a little pickled ginger.

Variation: This Japanese classic has gained exceptional popularity in the United States, where it is served at food outlets nationwide. Some recipes add fresh ginger; and a tablespoon or honey or maple syrup instead of the sugar to sweeten the marinade.
