Light Bites Recipes - Crispy Salt and Pepper Squid
Recipe
Ingredients

750g/1lb/10oz fresh squid,
cleaned
-
juice of 4-5 lemons
-
15ml/1 tbsp ground black pepper
-
15ml/1 tbsp sea salt
-
10ml/2 tsp caster (superfine)
sugar
-
115g/4oz/1 cup corn flour (cornstarch)
-
3 egg whites, lightly beaten
-
vegetable oil, for
deep-frying
-
chili sauce or sweet-and-sour
-
sauce, for dipping
-
skewers or toothpicks,
to serve
Serves 4
Method:
-
Cut the squid into
large bite size pieces and score a diamond pattern on
each piece, using a sharp knife of a cleaver.

Trim
the tentacles. Place in a large mixing bowl and pour
over the lemon juice. Cover and marinate for 10-15
minutes. Drain well and pat dry.

In a sauce pan bowl
mix together the pepper, salt, sugar and corn flour.
Dip the squid pieces in the egg whites and then toss
lightly in the seasoned flour, shaking off any
excess.

Fill a wok one-third full of oil and heat to
180°C/350°F or until cube of bread, dropped into the
oil, browns in 40 seconds. Working in batches,
deep-fry the squid for 1 minute.

Drain the crispy
pieces on kitchen paper and serve immediately,
threaded on to skewers, with chili or sweet-and sour
sauce for dipping.
