slices medium-cut white bread, crusts removed

raw
tiger prawns (jumbo shrimp), peeled and deveined

50g/2oz drained, canned
water chestnuts

1 egg
white

finely chopped

tsp dry sherry

Serves 4-6
Method:

Preheat the oven to 120°C/250°F/Gas
1/2. Cut each slice
of bread into four triangles. Spread out on a baking
sheet and bake for 25 minutes or until crisp.

Meanwhile, put the prawns in a food processor with
the water chestnuts, egg white, sesame oil and salt.
Process the mixture, using the pulse facility, until
a coarse puree is formed.

Scrape the mixture into a
bowl, stir in the chopped spring onions and sherry
and set aside for 10 minutes at room temperature to
allow the flavors to blend.

Remove the toast from
the oven and raise the temperature to 200°C/400°F/Gas
6. Spread the prawn mixture on the toast, sprinkle
with the sesame seeds and bake for 12 minutes.

Garnish the prawn toasts with spring onion and serve
hot or warm.
Note:
This healthy version of the ever-popular appetizer
has lost none of its classic crunch and taste. Serve
it as a snack, too. It is great for getting a party
off to a good start.
Cook's Tip: To toast sesame seeds, put them
in a dry
frying
pan and place
over a medium heat until the seeds change color.
Shake the pan constancy
so the seeds brown evenly and do not bum.
