Light Bites Recipes - Spicy Chicken Wings

Ingredients

2 chicken wings
-
fresh coriander
(cilantro) leaves, roughly chopped, and 2-3 fresh green
chilies, seeded and quartered
lengthways, to garnish
For the spice paste:

4 shallots, chopped

4 garlic cloves,
chopped 25g/1oz fresh root ginger, chopped

fresh red
chilies, seeded and chopped

1 lemon grass
stalk, trimmed and chopped

30ml/2 tbsp sesame oil
-
15ml/1 tbsp tomato puree (paste)

10ml/2 tsp sugar
-
juice of 2
limes
-
salt and ground black pepper
Serves 4
Method:

First make the spice paste. Using a mortar and
pestle or food processor, grind the shallots, garlic,
ginger, chilies and lemon grass to a paste. Bind
with the oil and stir in the tomato puree, sugar and
lime juice. Season with salt and pepper.

Rub the spice
paste into the chicken wings, place in a
bowl, cover and leave to marinate for 2 hours.

Heat a grill
(broiler) or prepare the barbecue. Lift the
wings out of the marinade and place them on a rack.

Cook them for
about 5 minutes each side until cooked
through, brushing with marinade while they cook
Serve immediately, garnished with coriander and
chilies.
Note: Whole chickens or just
the wings and drumsticks, marinated in spicy or
tangy pastes and then grilled (broiled) over
charcoal or fried in a wok, are a common sight in
the food Stalls of Malaysia and Singapore. Spicy
wings and drumsticks are very popular as a quick
snack, and are often served on their own with a few
sprigs of coriander and slices of chili to munch
on.
