Light Bites Recipes - Tamarind Prawns
Recipe
Ingredients

500g/1 1/4lb fresh,
large prawns (shrimp)
-
45ml/3 tbsp tamarind
pulp
-
15ml/1 tbsp dark soy
sauce
-
15ml/1
tbsp sugar
-
ground black pepper
-
fresh coriander (cilantro) leaves
and
2-4 fresh green chilies, seeded and quartered
lengthways, to garnish
Serves 2-4
Method:

Devein the prawns. Remove the feelers and legs.
Rinse well, pat dry and using a sharp knife, make an
incision along the curve of the tail.

Mix the tamarind pulp with 1 cup warm water. Soak until
soft, squeezing it with your fingers to help soften
it.

Strain into a bowl and add the dark soy sauce,
sugar and pepper. Pour over the prawn, cover and
marinate for 1 hour.

Grill (broil) the prawns for 3
minutes on each side until cooked through, brushing
frequently with the marinade as they cook.

Serve
immediately, garnished with coriander and chilies.
