Ingredients

1 avocado, stoned (pitted)

juice of 1/2 lime
-
30ml/2 tbsp sweetened
condensed milk

30ml/2 tbsp coconut cream
-
a pinch of salt

fresh mint leaves,
to decorate

1/2 lime, halved, to
serve

Method:

Put the avocado flesh into a food processor or
blender and puree it with the lime juice until well
mixed.

Add
the condensed milk, coconut cream and salt and
process until the mixture is smooth and creamy.

Spoon the mixture into individual bowls or glasses
and chill over ice. Decorate with a few mint leaves
and serve with lime wedges to squeeze over.
This
sweet
avocado
dessert
can also be served as a thick puree or blended with
coconut milk until it is the consistency of thick
pouring cream. This makes a delicious drink when a
couple of ice cubes are stirred in.
Cook's Tip:
Avocadoes discolor quickly when cut and exposed
to the air, so prepare them immediately
before they are to be used. If you have used
only half an avocado and don't want to
throwaway the other half, you can preserve the rest
for a short while by leaving the stone (pit) in
place and wrapping it very tightly in clear film
(plastic wrap). Store in the refrigerator but use as
soon as
possible.
Variation:
This recipe works
equally well with other soft-fresh fruit, such as
bananas, mango and papaya.
