Desserts Recipes - Black Rice Pudding Recipe

Ingredients

  • 175g/6oz/1 cup black or white glutinous rice

  • 30ml/2 tbsp soft light brown sugar

  • 475m/2 cups coconut milk

  • 3 eggs

  • 30ml/2 tbsp sugar

Serves 4-6


Method:

  1. Combine the glutinous rice and brown sugar in a pan. Pour in half the coconut milk and 250ml/1 cup water.

  2. Bring to the boil, reduce the heat to low and simmer, stirring occasionally, for 15-20 minutes, or until the rice has absorbed most of the liquid. Preheat the oven to 150°C/300°F/Gas 2.

  3. Spoon the rice mixture into a single large ovenproof dish or divide it among individual ramekins. Beat the eggs with the remaining coconut milk and sugar in a bowl.

  4. Strain the egg mixture into a jug (pitcher), then pour it evenly over the par-cooked rice in the dish or ramekins. Place the dish or ramekins in a roasting pan.

  5. Carefully pour in enough hot water to come halfway up the sides of the dish or ramekins, then cover with foil and bake for about 35-60 minutes, or until the custard has set. Serve warm or cold.

This baked pudding has a distinct character and flavor all of its own. Black glutinous rice, also known as black sticky rice, has long dark grains and a nutty taste reminiscent of wild rice. Its intriguing appearance is rather likely to arouse curiosity among guests who have never eaten black rice before.

Cook's Tip: White glutinous rice will suit this recipe if you'd prefer to use it, but traditionally it is more often used in savory recipes.
