Grilled Fruit with Lime Cheese

Ingredients

4 long
fresh
lemon
grass stalks

1 mango, peeled, stoned (pitted) and
sliced

1 papaya, peeled, seeded and diced

1
star fruit, cut into slices
and halved

8 fresh bay leaves nutmeg

60ml/4
tbsp maple syrup

50g/2oz/1/2
cup demerara (raw)
sugar
For the lime cheese:
-
150g/5oz
curd cheese or
low-fat soft
cheese
-
120ml/1/2
cup double (heavy) cream
-
grated rind and
juice of 1/2
lime
-
30ml/2
tbsp icing
(confectioner's)
sugar
Serves 4
Method:
-
Prepare the barbecue or preheat the grill (broiler).
Cut the top of each lemon grass stalk into a point
with a sharp knife.

Discard the outer leaves, then
use the back of the knife to bruise the length of
each stalk to release the oils. Thread each stalk,
skewer-style, with the fruit pieces and bay leaves.

Support a piece of foil on a baking sheet and roll
up the edges to make a rim. Grease the foil, lay the
kebabs on top and grate a little nutmeg over each.

Drizzle the maple syrup over, dust liberally with
the sugar and grill (broil) for 5 minutes.

Make
the lime cheese by combining the cheese, cream,
grated lime rind, juice and icing sugar in a bowl.
Serve immediately with the lightly charred fruit
kebabs.
Grilled fruits make a fine
finale to an 01
fresco
party,
whether they are cooked over hot coals or under a
hot grill. The lemon grass skewers give the fruit a
subtle lemon tang.

Tip:
Only fresh lemon grass will work as skewers (or this
recipe. The preserved kind is a useful
store-cupboard (pantry) item (or making curries, but
too soft
to stay on skewers.
