Desserts Recipes - Mango and Coconut Tofu Whip Recipe

Ingredients

  • 2 large ripe mangoes

  • 200ml/17fl oz/scant 1 cup coconut cream

  • 200g/7oz silken tofu

  • 45ml/3 tbsp maple syrup

  • mint sprigs or grated lime rind, to decorate

Serves 6


Method:

  1. Using a sharp knife, peel and stone (pit) the mangoes and coarsely chop the flesh. Place the flesh in a blender or food processor with the coconut cream and silken tofu.

  2. Add the maple syrup and process to a smooth, rich cream. Pour into serving glasses or bowls and chill for at least 1 hour before serving.

  3. Decorate with mint sprigs or some grated lime rind.

This smooth dessert has a truly tropical taste. Few fruits are quite so luscious and sweet as mangoes and their slightly resinous flavor is superbly complemented by coconut cream. Add the magical texture of silken tofu and you will achieve perfection in a glass.

Cook's Tip: Make sure that you buy pure maple syrup for the best favor.

Variations: Silken tofu con also be used to make a berry fruit fool. Tip a 200g/7 oz pocket of silken tofu into the bowl of a food processor and odd 175g/6oz hulled strawberries, raspberries or blackberries. Process the mixture to a smooth puree, then scrape into a bowl and sweeten with a little honey, maple syrup or maize malt syrup. For a delectable tofu smoothie, blend 2 bananas with 400g1140z silken tofu, sweeten with honey, and favor with almond extract. For best results, cut up and freeze the tofu first.
