Ingredients

400g/14oz can sliced mango

grated rind
of 1 lime

juice
of 1/2 lime

150ml/1/4 pint/2/3 cup double (heavy) cream

90ml/6 tbsp Greek (US strained plain) yogurt

fresh mango slices,
to decorate (optional)
Serves 4
Method:

Drain the canned mango slices and put them in the
bowl of a food processor. Add the grated lime rind
and the lime juice. Process until the mixture forms
a smooth puree.

Alternatively, mash the mango slices
with a potato masher, then press through a sieve
into a bowl with the back of a wooden spoon. Stir in
the lime rind and juice.

Pour the mango mixture into a jug (pitcher). Set
aside while pouring the cream into a bowl and add
the yogurt. Whisk until the mixture is thick and
then quickly whisk in the mango mixture.

Spoon
into four tall cups or glasses and chill for 1-2
hours. Just before serving, decorate each glass with
fresh mango slices, if you like.
Canned mangoes are used here for convenience, but
the dish tastes even better if made with fresh ones.
Choose a variety like the voluptuous Alphonso mango,
often prized as the king of its kind in Asia due to
its wonderful fragrance and indescribably luscious
taste. Simply peel and slice then process as for the
canned.
Cook Tip's: When
mixing the cream and yogurt mixture with the mango
puree, whisk just enough to combine, so
as not to lose the I lightness of the
whipped cream mixture. If you prefer, fold the
mixtures together lightly, so that the fool is
rippled. The best way to do this is to
combine the mixtures in a bowl and use a skewer
to stir them and create the rippled effect.
