Desserts Recipes - Papaya Baked with Ginger

Ingredients

2 ripe papayas

2 pieces stem ginger in
syrup, drained, plus 15ml/1 tbsp syrup from the jar

8 amaretti or other
dessert biscuits (cookies), coarsely crushed

45ml/3 tbsp raisins

shredded, finely pared rind and juice of
1 lime

25g/1 oz/1/4 cup
pistachio nuts, chopped

15ml/1 tbsp light
brown muscovado sugar

60ml/4 tbsp double
(heavy) cream, plus extra to serve

Method:

Preheat the oven to 200°C/400°F/Gas 6. Cut the papayas in half and
scoop out their seeds.

Place
the halves in a baking dish and set aside. Cut the stem ginger into
fine matchsticks.

Make the filling. Combine the crushed amaretti
biscuits, stem ginger matchsticks and raisins in a bowl.

Stir
in the lime rind and juice, two thirds of the nuts, then add the
sugar and cream. Mix well.

Fill
the papaya halves and drizzle with the ginger syrup. Sprinkle with
the remaining nuts. Bake for about 25 minutes or until tender.

Serve each papaya half with a generous helping of cream.
Ginger
is responsible for enhancing the flavor of papaya in this recipe.

overcook the papaya or its flesh will become very watery.
Variation:
For a
slightly
different serving suggestion, try Greek (US strained plain)
yogurt and almonds instead of
cream and pistachios.
