with Papaya Sauce Recipe
Ingredients

1 sweet pineapple melted butter, for greasing and
brushing

2 pieces drained stem ginger
in syrup, cut into fine matchsticks, plus 30ml/2
tbsp stem ginger syrup from the jar

30ml/2 tbsp demerara
(raw) sugar

pinch
of ground cinnamon fresh mint sprigs, to decorate
For the sauce:

Method:

Peel the pineapple and take spiral slices off the
outside to remove the eyes. Cut it crossways into
six slices, each 2.5cm/1 in thick.

Line a baking
sheet with a sheet of foil, rolling up the sides to
make a rim. Grease the foil with melted butter.
Preheat the grill (broiler).

Arrange the pineapple slices on the lined baking
sheet. Brush with butter, then top with the ginger
matchsticks, sugar and cinnamon.

Drizzle over the
stem ginger syrup. Grill (broil) for 5-7 minutes or
until the slices are golden and lightly charred on
the surface.

Meanwhile, make the sauce. Cut a few
slices from the papaya and set aside, then puree the
rest with the apple juice in a blender or food
processor.

Press the puree through a sieve
(strainer) placed over a bowl, then stir in any
juices from cooking the pineapple.

Serve the
pineapple slices with a little sauce drizzled around
each plate. Decorate with the reserved papaya slices
and the mint sprigs.
Note: Pineapple cooked
this way takes
on a superb flavor and is sensational when served with the sweet
papaya sauce. This sauce can also be served with savory dishes,
particularly grilled chicken and game birds as well as pork and lamb.
