Desserts Recipes - Pistachio Lassi Recipe

Ingredients

  • 8-12 pistachio nuts

  • 300ml/1 1/4 cups natural (plain) yogurt

  • 5ml/1 tsp sugar, to taste

Serves 4


Method:

  1. Chop four pistachio nuts roughly and set them aside for the decoration.

  2. Grind the remaining nuts as finely as you can. Pour the yogurt into a tall jug (pitcher) and add the sugar.

  3. Whisk until frothy, then whisk in 300ml/1/2 pint/1 1/4 cups water and the finely ground nuts. Whisk for 2 minutes, then pour into chilled glasses.

  4. Top with the chopped nuts and serve very cold.

Note: This delicate flavor of pistachio nuts combines beautifully with the yogurt to create light dessert that needs very little sweetening. Don't forget to allow a few pistachios for decoration.
