Pistachio Lassi

Method:

Chop four pistachio nuts roughly and set them aside for
the decoration.

Grind the remaining nuts as finely as
you can. Pour the yogurt into a tall jug (pitcher) and
add the sugar.

Whisk until frothy, then whisk in
300ml/1/2 pint/1 1/4 cups water and the finely ground
nuts. Whisk for 2 minutes, then pour into chilled
glasses.

Top with the chopped nuts and serve very cold.
Note:
This delicate flavor of pistachio nuts combines
beautifully with the yogurt to create light dessert that
needs very little sweetening. Don't forget to allow a
few pistachios for decoration.
