Steamed Ginger Custards Recipe

Method:

Using a mortar and pestle or food processor, grind
the ginger to a fine paste. Press the ginger paste
through a fine sieve (strainer) set over a bowl, or
twist it in a piece of muslin (cheesecloth), to
extract the juice.

Fill a wok one-third of the way up with water. Place
a
bamboo steamer in the wok, bring the water to the
boil and reduce the heat to low.

In a bowl, whisk the coconut milk, sugar and egg
whites with the ginger juice until the mixture is
smooth and the sugar
has dissolved.

Pour the mixture into four individual heatproof
bowls and place them in the steamer. Cover and steam
for 15-20 minutes, until the mixture sets.

Remove the bowls from the steamer and leave to cool. Cover them with
clear film (plastic wrap) and place in the refrigerator
overnight.

Serve the custards chilled or at room
temperature as desired.
Delicate and warming, ginger custard is a favorite
among the Chinese. These individual custards are
often served warm, straight from the steamer, and
enjoyed as a mid-afternoon snack. They work just as
well served as a chilled dessert, however.
Variation:
Slice
about
6
pieces
of preserved
(stem)
ginger and add them
to the coconut mixture before pouring into bowls
for steaming. It will intensify the favor of
this sweet custard dessert.
