Method:

Pour the water into a pan and bring it to the boil.
Stir in the tapioca pearls, reduce the heat and
simmer for about 20 minutes, until translucent.

Pour in the coconut milk, then add the sugar and a
pinch of salt. Cook gently for 30 minutes.

Stir in the diced bananas and cook them for 5-10
minutes until soft. Spoon into individual warmed
bowls and serve immediately while still hot.
This is the type of dessert that everybody's mother
or grandmother makes. Sweet and nourishing, the
tapioca pearls are cooked in coconut milk and
sweetened with bananas and sugar.
Variations: Instead of adding the diced
bananas to the warm tapioca
mixture, try one of
the following, adjusting the cooking time
as
needed so
that the fruit is fully cooked:
-sliced rhubarb
-small apple or pear, cut into wedges
-nectarine or mango slices
