Desserts Recipes - Zingy Papaya, Lime and Ginger Salad Recipe

Ingredients

  • 2 large ripe papayas

  • juice of 1 fresh lime

  • 2 pieces preserved stem ginger, finely sliced

Serves 2


Method:

  1. Cut the papaya in half lengthways and scoop out the seeds, using a teaspoon.

  2. Using a sharp knife, cut the flesh into thin slices and arrange on a platter.

  3. Squeeze the lime juice over the papaya and sprinkle with the sliced stem ginger. Serve immediately.

Note: This refreshing, fruity salad makes a lovely light breakfast, perfect for the summer months. Choose really ripe, fragrant papayas for the best flavor. Mangoes also work well.
