Zingy Papaya, Lime and Ginger Salad

Method:

Cut the papaya in half lengthways and scoop out the
seeds, using a teaspoon.

Using a sharp knife, cut
the flesh into thin slices and arrange on a platter.

Squeeze the lime juice over the papaya and
sprinkle with the sliced stem ginger. Serve
immediately.
Note:
This refreshing, fruity salad makes a lovely light
breakfast, perfect for the summer months. Choose
really ripe, fragrant papayas for the best flavor.
Mangoes also work well.
