Balinese Fried Chicken Recipe
Ingredients

1 medium onion,
chopped
-
2 garlic cloves,
crushed
-
1 in.
piece of fresh root ginger, peeled and chopped

2 red chilies,
chopped
-
4 candle or brazil
nuts, chopped
-
1 cup coconut milk
or water
-
1/4 cup peanut oil
-
4 large chicken
pieces
-
1 Tbs. soy sauce
-
1 tsp. soft brown
sugar
-
1 tsp. wine
vinegar

Method:
-
Put the onion, garlic, ginger, chill is and nuts
into a blender with 2 tablespoons of the coconut
milk or water and blend to a smooth puree.

Heat the oil in a large, deep frying-pan. When
it is hot, add the chicken pieces and fry for 8
to 10 minutes, or until they are evenly browned.

Using tongs or a slotted spoon, transfer the
chicken pieces to a plate and keep hot. Add the
puree mixture to the frying-pan and stir-fry for
5 minutes.

Stir in the remaining coconut milk or water, the
soy sauce, sugar and vinegar and bring to the
boil. Add the chicken pieces to the pan and
baste them thoroughly with the liquid.

Reduce the heat to low and simmer the chicken,
uncovered, for 30 to 40 minutes, or until the
pieces are cooked through and tender.

Transfer the mixture to a warmed serving dish
and serve at once.
