Asian Poultry Recipes - Fried Chicken with Mushrooms
Recipe
Ingredients

1/4 cup
peanut oil
-
3 garlic cloves,
crushed
-
5cm/2in. piece of
fresh root ginger, peeled and chopped
-
1 x 3 lb.
chicken, cut into small pieces
-
8 dried Chinese
mushrooms, soaked in cold water for 30 minutes,
drained, stalks removed and sliced
-
1 Tbs. sugar
-
2 Tbs. vinegar
-
2 Tbs. fish sauce
-
175ml/1/4 cup
water
-
1 Tbs. chopped
coriander leaves
Serves 4
Method:

Heat the oil in a large saucepan. When it is
hot, add the garlic and ginger and stir-fry for
2 minutes.

Add the chicken and cook for 8 to 10 minutes,
stirring occasionally. Stir in all the remaining
ingredients, except the coriander, and stir-fry
for 10 minutes, or until the chicken is cooked
through.

Transfer the mixture to a warmed serving bowl
and garnish with the coriander before serving.
