Asian Poultry Recipes - Fried Chicken with Mushrooms Recipe

Ingredients

  • 1/4 cup peanut oil

  • 3 garlic cloves, crushed

  • 5cm/2in. piece of fresh root ginger, peeled and chopped

  • 1 x 3 lb. chicken, cut into small pieces

  • 8 dried Chinese mushrooms, soaked in cold water for 30 minutes, drained, stalks removed and sliced

  • 1 Tbs. sugar

  • 2 Tbs. vinegar

  • 2 Tbs. fish sauce

  • 175ml/1/4 cup water

  • 1 Tbs. chopped coriander leaves

Serves 4


Method:

  1. Heat the oil in a large saucepan. When it is hot, add the garlic and ginger and stir-fry for 2 minutes.

  2. Add the chicken and cook for 8 to 10 minutes, stirring occasionally. Stir in all the remaining ingredients, except the coriander, and stir-fry for 10 minutes, or until the chicken is cooked through.

  3. Transfer the mixture to a warmed serving bowl and garnish with the coriander before serving.
