Asian Poultry Recipes - Indonesian Chicken Sate (Sate Ayam) Recipe

Ingredients

  • 2 Tbs. soft brown sugar

  • 1/4 cup molasses

  • 1/2 cup dark soy sauce

  • 2 garlic cloves, crushed

  • juice of t lemon

  • 2 Tbs. groundnut oil

  • 3 chicken breasts

Sauce:

  • 1 1/3 cups unsalted peanuts, shelled

  • 2 red challis or 1 tsp. sambal ulek

  • 3 garlic cloves

  • 1 tsp. salt

  • 1 onion, coarsely chopped

  • 1/4 cup groundnut oil

  • 1/3-1/2 cup water

  • 1 Tbs. soft brown sugar mixed with 2 Tbs. dark soy sauce

  • 1-2 Tbs. lemon juice

Serves 6-8


Method:

  1. Mix the sugar, treacle (molasses) and soy sauce together in a small bowl. Stir in the garlic, lemon juice and oil and set aside. Skin and bone the chicken breasts, then cut the meat into 1 1/2 cm/3/4 in. cubes.

  2. Thread the cubes on to skewers and arrange the skewers in a shallow dish. Pour over the soy sauce mixture and set aside to marinate at room temperature for 1 hour, basting occasionally.

  3. Turn the skewers in the marinade from time to time. Preheat the grill (broiler) to high.

  4. To make-the sauce, put the peanuts in the grill (broiler) pan and grill (broil) them for 2 to 3 minutes, turning occasionally. Remove from the heat and gently rub them between your hands to remove the skins.

  5. Put the peanuts in a grinder or b.1ender with the chilies or sambal ulek, garlic, salt, onion and 2 tablespoons of the groundnut oil. Blend to a thick paste, adding enough of the water to prevent the blender from sticking. Remove the paste from the blender, put in a bowl and set aside.

  6. Heat the remaining oil in a saucepan. When it is hot, add the nut paste. Reduce the heat to moderately low and fry the paste for 3 minutes, stirring constantly. Stir in the remaining water and simmer gently for 5 minutes, or until it is thick and smooth.

  7. Remove from the heat and stir in the soy sauce mixture and lemon juice. Taste and add more salt and lemon if necessary. Keep hot while you cook the chicken.

  8. Arrange the skewers on the rack of the grill (broiler). Grill (broil) the chicken for 5 minutes, turning occasionally, or until the cubes are cooked through and tender.

  9. Remove from the heat and arrange the skewers on a warmed serving platter, or across a serving bowl. Serve at once, with the sauce.
