Indonesian Spicy Fried Chicken Recipe
Ingredients
-
1 x 3 lb.
chicken, cut into 12 or 15 pieces
-
1 oz.
tamarind
-
1/2 cup boiling
water
-
2 garlic cloves,
crushed
-
2 tsp. ground
coriander
-
1 tsp. ground
ginger
-
1 Tbs. wine
vinegar or lemon juice
-
1 tsp. soft brown
sugar
-
1/2 cup flour
-
vegetable oil for
deep-frying
Serves 4
Method:
-
Put the chicken
pieces into a large, shallow dish and set aside.
Put the tamarind into a bowl and pour over the
boiling water. Set aside until it is cool.

Put the contents
of the bowl through a strainer into the dish
containing the chicken, pressing as much of the
pulp through as possible.

Combine all the
remaining ingredients, except the flour and oil,
beating until they are thoroughly combined. Stir
them into the dish containing the chicken until
the mixture is blended and all the pieces are
well coated.

Put into the
refrigerator to marinate for at least 8 hours,
or overnight. Remove from the dish.

Fill a large
deep-frying pan about one-third full with oil
and heat until it is very hot. Dip the chicken
pieces into the flour, shaking off any excess
flour.

Carefully lower
the pieces into the oil, a few at a time, and
deep-fry for 5 to 8 minutes, or until they are
cooked through and golden brown. Remove from the
oil and drain on kitchen towels. Serve hot.
