Asian Poultry Recipes - Malaysian Hot and Sour Chicken, Penang Style Recipe

Ingredients

  • 4 Tbs. vegetable oil

  • 3 medium onions, finely chopped

  • 2 garlic cloves, crushed

  • 2 red or green chilies, finely chopped

  • 1 Tbs. soft brown sugar

  • 8 chicken pieces

  • 3 Tbs. dark soy sauce

  • 3 Tbs. wine vinegar

  • 2 Tbs. water

  • 1/2 tsp. salt

Serves 6-8

Method:

  1. Heat the oil in a deep frying-pan. When it is hot, add the onions, garlic and chilies and fry for 5 minutes, stirring occasionally.

  2. Stir in the sugar and fry until the onions are golden brown. Add the chicken pieces and fry for 8 minutes, turning frequently, or until they are deeply browned.

  3. Stir in the remaining ingredients and bring to the boil. Cover, reduce the heat to low and simmer for 15 minutes.

  4. Uncover the pan, increase the heat to moderate and cook the chicken for 25 to 30 minutes, or until it is cooked through. Serve at once.
