Philippines Chicken Stew (Timola) Recipe
Ingredients

4 Tbs. vegetable
fat

1 medium onion,
sliced

2 garlic cloves,
crushed

1 1/2 in piece of
fresh green ginger, peeled and chopped

1 x 3 lb.
chicken, cut into serving pieces

1 1/4 cups water
-
1 pawpaw, peeled
and finely chopped

1
1/3 cups chopped spinach leaves

Method:

Melt the fat in a
large saucepan. Add the onion, garlic and ginger
and fry, stirring occasionally, until the onion
is soft. Add the chicken pieces and fry gently
until they are browned all over.

Pour over the
water and bring to the boil. Reduce the heat to
low, cover the pan and simmer for 45 minutes to
1 hour, or until the chicken is cooked through
and tender.

Stir in the
pawpaw and spinach and cook for a further 10
minutes. Serve at once.
Note: Pawpaw or papaya can be
difficult
to find in the West; if this is so, mango or guava
can be substituted.
