Meat Recipes - Aromatic Pork with Basil

Ingredients

40g/1 1/2oz
corn flour (cornstarch)

500g/1 1/4lb pork fillet (tenderloin),
thinly sliced

15ml/1 tbsp sunflower oil

10ml/2 tsp
sesame oil

15ml/1 tbsp very
finely shredded fresh root ginger
-
3 garlic cloves,
thinly sliced
-
200g/7oz/scant
2
cups mangetouts
(snow peas), halved
-
300g/11oz/generous
4
cups
mixed
mushrooms, sliced if large
-
120ml/1/2 cup
Chinese cooking wine
-
45ml/3 tbsp soy sauce
-
a small handful
of sweet basil leaves
-
salt
and ground black pepper
-
steamed jasmine rice, to serve
Serves 4
Method:

Place
the
corn flour in a strong plastic bag. Season well and add the
sliced pork Shake the bag to coat the pork in flour and then remove
the pork and shake off any excess flour. Set aside.

Preheat the wok over a high heat and add the oils. When very hot,
stir in the ginger and garlic and cook for 30 seconds.

Add the pork
and cook over a high heat for about 5 minutes, stirring often, until
sealed. Add the mangetouts and mushrooms to the wok and stir-fry
for 2-3 minutes.

Add the Chinese cooking wine and soy sauce,
stir-fry for 2-3 minutes and remove from the heat.

Just
before serving, stir the sweet basil leaves into the pork Serve with
steamed jasmine rice.
Note: The
combination of moist, juicy pork and mushrooms, crisp green
mangetouts and fragrant basil in this ginger and garlic-infused
stir-fry is absolutely delicious.
Cook's
Tip: For the mushroom medley, try to include fresh
shiitake and oyster mushrooms as well as cultivated button (white)
ones.
