Meat Recipes - Seared Garlic Beef

Ingredients

350g/12oz beef
fillet (tenderloin) or
sirloin, cut into bite size chunks

15ml/1 tbsp sugar
-
juice of 3 limes
-
2 garlic cloves, crushed
-
7.5ml/1 1/2 tsp ground black pepper

30ml/2 tbsp
unsalted roasted peanuts, finely chopped

12 lettuce leaves
For the marinade:
-
15ml/1 tbsp groundnut (peanut) oil
-
45ml/3
tbsp mushroom soy sauce
-
10ml/2 tsp soy
sauce
-
15ml/1 tbsp sugar
-
2 garlic cloves,
crushed
-
7.5ml/1 1/2 tsp ground black pepper

Method:

To
make the marinade, beat together the oil, the two soy
sauces and the sugar in a bowl, until the sugar has
dissolved.

Add the garlic and pepper and mix well. Add
the beef and coat in the marinade. Leave for 1-2 hours.

In a small bowl, stir the sugar into the lime juice,
until it has dissolved. Add the garlic and black pepper
and beat well. Stir in the peanuts and put aside.

Heat a
wok or heavy pan and sear the meat on all sides. Serve
immediately with lettuce leaves for wrapping and the
lime sauce for dipping.
Note: Flavored with lots of garlic, the tender chunks of
beef are wrapped in lettuce leaves and dipped in a
piquant lime sauce. Beef is well suited to searing,
and this can be done in a pan, but can also be
char grilled if you prefer.
Variation:
This delicious
dish can also be mode with quail
or even ostrich. The marinade ensures
that the meat remains juicy. If using poultry,
ensure it is fully cooked and not simply seared.
