Meat Recipes - Sticky Pork Ribs

Ingredients

30ml/2 tbsp caster (superfine) sugar

2.5ml/1/2 tsp five-spice powder

45ml/3 tbsp hoisin sauce

30ml/2 tbsp yellow bean
sauce

3 garlic cloves, finely chopped

15ml/I1 tbsp corn
flour (cornstarch)

2.5ml/1/2 tsp salt

16 meaty pork ribs chives and
sliced spring onion (scallion),
to garnish

salad
or rice, to serve
Serves 4
Method:

Combine the
caster sugar, five-spice powder, hoisin
sauce, bean sauce, garlic, corn flour and salt in a bowl.
Mix well.

Place the pork ribs in an ovenproof dish and pour the
marinade over. Mix thoroughly, cover with clear film
(plastic wrap) and leave in a cool place for 1 hour.

Preheat the oven to 180°C/350°F/Gas
4.
Unwrap the
ovenproof dish, replace the plastic wrap with foil and
bake the pork ribs for 40 minutes. Baste the ribs from
time to time with the cooking juices.

Remove the foil, baste the ribs and continue to cook
for 20 minutes until glossy and brown.

Garnish with
chives and sliced spring onion and serve with a salad
or rice.
Note: Many
people assume pork ribs to be high in fat, but these
fall well within acceptable limits. Take the time to
marinate the meat as this allows all the flavors to
permeate.
Cook's Tips:
The
ribs barbecue very
well.
Par-cook them
in the oven
for 40
minutes as described in the main recipe, then transfer
them to the barbecue for 15 minutes to finish
cooking. The sauce coating makes the ribs liable to
bum, so watch them closely.
Don't forget finger bowls when serving these. They are
not
called sticky ribs for nothing.
