Beef with Sesame Sauce

Ingredients

450g/1lb
beef sirloin
or fillet
(tenderloin), cut into thin strips

15ml/1 tbsp groundnut (peanut)
or sesame oil

2 garlic cloves,
finely chopped
-
2
fresh red
chilies, seeded and finely chopped

7.5ml/1 1/2 tsp sugar
-
30ml/2
tbsp sesame paste

30-45ml/2-3
tbsp beef stock
or water
-
sea salt and ground black
pepper red chili strips, to garnish

1
lemon, cut into quarters,
to serve
For the marinade:

Method:

In a
bowl,
mix
together the ingredients for the marinade. Toss
in the beef, making sure it is well coated. Leave to
marinate for 30 minutes.

Heat the groundnut or sesame
oil in a wok. Add the garlic and chilies and cook until
golden and fragrant. Stir in the sugar. Add the beef,
tossing it around the wok to sear it.

Stir in the sesame paste and enough stock or water to
thin it
down. Cook for 1-2 minutes, making sure the beef is
coated
with
the sauce.

Season the sauce with salt and pepper.
Spoon into
warmed
bowls, garnish with chili strips and serve with lemon wedges.
Note:
Similar to stir-fried beef with sate, the spicy peanut
sauce, this recipe has a deliciously rich, spicy and
nutty flavor.
