Meat Recipes - Sweet and Sour Pork Strips Recipe

Ingredients

  • 30ml/2 tbsp dark soy sauce

  • 15ml/1 tbsp clear honey

  • 400g/14oz pork fillet (tenderloin)

  • 6 shallots, very thinly sliced lengthways

  • 1 lemon grass stalk, thinly sliced

  • 5 kaffir lime leaves, thinly sliced

  • 5cm/2in piece fresh root ginger, peeled and finely sliced

  • 1/2 red chilli, seeded and shredded

  • small bunch fresh coriander (cilantro), chopped

For the dressing:

  • 30ml/2 tbsp soft light brown sugar

  • 30ml/2 tbsp fish sauce

  • juice of 2 limes

  • 20ml/4 tsp thick tamarind juice, made by mixing tamarind paste with warm water

Serves 4


Method:

  1. Preheat the grill (broiler). Stir the soy sauce and honey together. Cut the pork lengthways into four fat strips.

  2. Place in a grill pan, coat with the soy sauce mixture, then grill (broil) for about 10-15 minutes, turning and basting the strips frequently, until the meat is cooked through.

  3. Slice the cooked pork across the grain, then shred. Place in a large bowl and add the remaining ingredients.

  4. Toss with the dressing, made by whisking all the ingredients together.
